Chelow Kebab is an Iranian dish consisted of cooked rice and one of the many varieties of Iranian kebab, dating back to Qajar period.
Mincer meat:1 kilogram
Levigated saffron: 1 teaspoon
Pepper, tomato and salt: Enough amounts
How to Prepare
At first, grate the onion and dispose the water of that.
Second, add pepper and salt with mincer meat to the grated onion in a bowl.
Third, boil levitated saffron with water and then mix it with meats, onion, salt and peppers and press it with your hands until the meat becomes sticky.
Put it into refrigerator for 3 hours.
Spite the Meats
In this step, you need a bowl of water beside yourself.
Put your hands in water and then pick a fist of meat and spit it like the picture and repeat the steps more and more.
Then put the spit meats and tomatoes on barbecue with changing position like straight angle and fan them until cooking and eat with cooked rice.
- don’t use only beef meat, use sheep and beef meat together or sheep only, because beef meat doesn’t have enough fat.
Two Times for preparing Chelow Kebab is 3 hours and Time for cooking is 30 minutes.
You should put the rice in water for 3 or 4 hours with salt. Throw away the salty water. put the salty rice in the pot with boiling water. After the rice boiled, pour them in the basket and wash with water. Put rice in the pot, turn down the stove for 45 minutes or 1 hour.
