Estamboli Polo is one of the most famous foods in Iran. This food is consisted of green bean, rice and turmeric.
You can cook it with meat, and chicken.
In this part, we explain about cocking with chicken but if you wanted to cock with meat, you can use 200 grams of mincemeat.
Rice (3 cups)
A breast of chicken
Tomato paste (2 tablespoons)
Turmeric, oil, salt, and black powder of pepper(in sufficient amount)
Water (3 cups)
How to Cook?
Make rice wet and wash it before starting. In a big pot, pour 3 cups of water and put the pot on the stove with medium temperature. Add salt to it and then add rice. Chop potatoes like cubes and mix them with oil in another pot, roast them until they are half cocked.
In a separate pot, mix chicken with turmeric until cocking it.
Grate onions like a cube, pour them in a pot, and roast them until the color of them changes to orange.
Next, torn the chicken, add it to the pot of onion, and roast them altogether. Chop tomatoes and add them to onions and chickens. In the next step, add tomato paste to them and roast the mixed ingredients until water of them evaporates.
In final step, add potatoes with pepper’s powder and salt to chicken’s mixture and rile them.
When the water of rice starts boiling, add mixture to it. Later, when the water of the mixture got evaporated, add just a little oil and water to it and put cover of pot with filter and wait for 30 or 40 minutes.
Now your food is ready.
